While oven is preheated to 300°F, mix the cornflakes and shredded coconut together in a large bowl.
Add the butter, honey and sugar to a saucepan over medium heat. Stir gently to prevent overheating.
Heat until the mixture is bubbly and stir often to prevent scorching. We do not want this mixture to burn but it should reach the foamy stage.
Pour melted hot mixture over the dry ingredients and stir to combine. Be gentle but thorough.
Spoon honey joys mixture into a muffin pan with paper liners.
Bake for 10 minutes in the hot oven, then remove. Allow to cool on the counter before eating or storing in air-tight container.
Notes:Take care to avoid over-heating the butter mixture. It should not reach the foamy stage.Be gentle when mixing in the cornflakes. Don't crush the cereal - instead gently fold ingredients together.
