Ingredients
  

  • 6 oz Butter
  • 1/4 cup Fine Granulated Sugar
  • 4 tbsp Honey
  • 1.5 cups shredded coconut
  • 9 cups Kelloggs Corn Flakes

Instructions
 

  • While oven is preheated to 300°F, mix the cornflakes and shredded coconut together in a large bowl.
  • Add the butter, honey and sugar to a saucepan over medium heat. Stir gently to prevent overheating.
  • Heat until the mixture is bubbly and stir often to prevent scorching. We do not want this mixture to burn but it should reach the foamy stage.
  • Pour melted hot mixture over the dry ingredients and stir to combine. Be gentle but thorough.
  • Spoon honey joys mixture into a muffin pan with paper liners.
  • Bake for 10 minutes in the hot oven, then remove. Allow to cool on the counter before eating or storing in air-tight container.

Notes

Notes:
Take care to avoid over-heating the butter mixture.  It should not reach the foamy stage.
Be gentle when mixing in the cornflakes.  Don't crush the cereal - instead gently fold ingredients together.
