Preheat your espresso machine. Then pull a shot (or two) directly into the serving cup.
Measure 2 tablespoons of honey and pour into the cup with espresso. Use a spoon to stir.
Set cup aside. Measure 8 ounces of cold milk into the frothing pitcher. Use the steam wand on your machine to heat and froth your milk. A thermometer is not required but is a good safety check against burns. If your machine does not have a steam wand. Heat the milk in the microwave and use a milk frothing wand to get the texture desired.
When the milk is hot and fluffy, pour it into the cup with honey and espresso. I prefer not to stir at this point but you can.
Add a good dollop of Whipped Cream if you desire and sprinkle the top with ground cinnamon. This is optional but well work the effort.
For the last (and I feel most important step) of making a honey bee latte. Use honey to create a thin drizzle over the top of the steamed milk OR whipped topping.
