Honey Popsicles Recipe

Use Greek yogurt, blueberries and honey to create a sweet treat that is sure to cool you down this Summer. This nutrition packed ice pop will help you get through the hottest months of the year.

Equipment

  • Silicone Popsicle Mold
  • 1 large bowl

Ingredients
  

  • 2 ounces raw honey by volume
  • 2 cups blueberries substitute fruit you like
  • 2 cups plain yogurt or vanilla Greek Yogurt

Instructions
 

  • Gather your ingredients. You will need a spoon, measuring cup, large bowl and a some type of mold. Any size or style of molds will work fine.
  • Measure 2 cups of berries. Mine were frozen so I allowed them to thaw and rinsed them first. I choose to use blueberries because I had them in the freezer. You can choose any type of fruit you desire.
    Strawberry, watermelon and blackberries are good ones to consider. Put berries in a large bowl.
  • Measure 2 oz of raw honey. Pour it into the bowl with berries and gently stir until berries are coated.
  • Add 2 cups of Greek Yogurt to the berry mixture and stir carefully until all ingredients are combined.
    I used vanilla yogurt to compliment the blueberry flavor. Stir gently, the berries will leak some juice turning the yogurt blue!
  • Spoon the mixture into your honey yogurt pop cups. Leave enough room for expansion and to push the handle into the mold.
    Be sure to clean off any excess mixture that may be around the rim. Then fit the tops on securely.
  • Cool in the freezer for 2 hours. Remove from the freezer when the pops are firm. If necessary, rinse the mold under warm water for a few seconds to facilitate removal.

Notes:
You can use any type of yogurt but vanilla is a good bland variety that lets the flavor of the fruit shine through.
Fresh or frozen blueberries are okay to use.  If using frozen, allow to thaw and drain first for best results.
